    I’ve been finding it easier and easier to cut meat out with the help of soy curls, impossible meat, and finding a particularly good vegetarian cookbook (Horn of The Moon).

    I’m always on the lookout to try new (to me) meat alternatives, and I’ve been really impressed with the options. I recently tried the meatless fish from trader joes, and holy crap are those good!

      It really is easier than ever to switch. Few years back there was almost nothing (and even less stuff actually good from those options). The last year or so there was an explosion of stuff and I’m here for it!

      I’ll have to check out that cookbook. I only eat meat if someone else does most of the prep because I start to loose track of what is food meat and what is my hand when cutting meat and losing focus which is pretty much guaranteed with my few hours each week where I’m not tired being wasted at work where I also continue to just be tired there too. My mind goes into weirdville when I’m tired which again is always so I live in weirdville.
